Black Bean & Banana Vegan Chocolate Mousse

Yes, you read that right. Chocolate mousse made from beans. It may sound a little different, but trust me, this tastes absolutely delicious.

And the best part? It's super good for you!

This nourishing dessert is packed full of plant-based protein, fibre, vitamins and minerals (iron, magnesium, potassium & calcium), so it's a perfect snack any time really! Have it for breakfast, pack it for work or enjoy it after dinner.

It's definitely one of my favourite healthy treats!

I love that even though it's healthy, this mousse is deliciously creamy, filling and indulgent tasting.
You would never know that it's made from beans.

To serve, it tastes delicious topped with fresh berries, cacao nibs and coconut shards. It'd be yummy layered with fruit in a parfait too. Or, just eat it with a spoon on it's own. All will be scrumptious!

Black Bean + Banana
Chocolate Mousse

Vegan | Dairy Free | Refined Sugar Free

INGREDIENTS

1 ½ cups cooked black beans

1-2 frozen bananas

¼ cup cacao

1 teaspoon cinnamon

1- 2 tablespoons nut butter (tahini, almond, peanut or a mixture are my favourites)

Splash of oat or almond milk

Dates/maple syrup to taste (if desired)

METHOD

Place beans, bananas, cacao, cinnamon and nut butter in a blender to mix. Add enough plant milk to make it blend well. Add dates or maple syrup to taste.
