We spend far too long getting distracted on vegan recipe blogs - but it's hard to resist when there are so many yummy dishes to try.

This week, we are inspired to try these spice-laden potatoes, sushi rolls made in all the colours of the rainbow, a tagine of silky aubergine & crunchy almonds, and for something sweet, the most incredibly colourful Aquafaba meringues and some nutty Almond Butter Cookies.

Virginia has been vegan for more than 2 years, after attending a talk by Phillip Wollen (OAM) when all the lightbulbs suddenly went on! Here was a way to live that touched the earth more lightly, didn't involve harm to animals, and opened the door to a much more healthy lifestyle.
