Crisp, colourful, and with a spicy creamy dressing - these little babies sure are a fun way to eat salad.
Spicy Falafel + Roasted Veggie Naan-wich
Not just a sandwich, but a naan-wich. Amazing.
It's also slathered with a green herb, pistachio + avocado sauce.
Wow, now we're just drooling over the keyboard.
If you can't get hold of vegan naan, you could try making it, like in this recipe.
Otherwise, we suspect any type of flat bread would be delicious here.
Colourful Asian Salad
w/ Sesame Miso Dressing
We made this rainbow salad as part of a plant-based picnic, and had it with these scrumptious spinach, mushroom & leek tartlets (recipe also in linked post).
If you don't have time to make these though, this salad is also delicious with crispy tofu strips, falafel, or even on its own.
Savoury Vegan Crepes
w/ Fresh Veggies + Maple Tahini Dressing
These ones are made with spelt + wheat flour,
and are filled with broccoli, radicchio, sprouts & pomegranate,
and are then drizzled in tahini sauce. Yum.
Fresh Mint + Glass Noodle Salad
This glass noodle salad is so easy to prepare, that we even made it whilst camping.
Lots of fresh herbs like mint, basil, parsley and coriander (cilantro)
make it full of flavour, and also super healthy.
